For 10" Pie:
5 c. rhubarb, chopped 1" chunks
1 1/4 c. sugar
1/2 c. flour
For 9" Pie:
4 c. rhubarb, chopped 1" chunks
1 c. sugar
1/3 c. flour
For 8" Pie:
3 c. rhubarb, chopped 1" chunks
3/4 c. sugar
1/4 c. flour
Stir ingredients together, making sure rhubarb is coated well. Put the rhubarb mixture in your pie crust, then top with pats of butter before putting on the top crust. After you put top crust on, cut slits in the dough, brush with milk, then sprinkle with sugar.
Bake at 450F for 10 mins, then turn down oven to 350F and bake for another 45-50 mins.
This is very fitting for me to post this recipe today, because it is dad's birthday and two of these 10" babies are cooling on my counter as I type. I would go as far to say that dad loves rhubarb pie more than the rest of the family combined. Pass me some beebop-a-reebop Rhubarb Pie {please}!!
