Kalamata Olive Bruschetta


  • Roast red, orange, or yellow bell peppers. (If you don't have a grill you can broil them in your oven on the top shelf for about 10 mins).
  • Heat up olive oil in a saucepan. When hot, add minced garlic and brown for 30 seconds.
  • Add chopped tomatoes to hot oil and garlic and cook for 1 minute.
  • Turn off heat. Chop the peppers into small chunks and add to the tomato mixture.
  • Halve kalamata olives and add to bruschetta.
  • Salt and pepper to taste.
  • Serve on flat bread, I like focaccia or a baguette works too.
  • It's also yummy to have fresh mozzarella chunks to eat with it. MMMmmm :)
