Kalamata Olive Bruschetta
Roast red, orange, or yellow bell peppers. (If you don't have a grill you can broil them in your oven on the top shelf for about 10 mins). Heat up olive oil in a saucepan. When hot, add minced garlic and brown for 30 seconds. Add chopped tomatoes to hot oil and garlic and cook for 1 minute. Turn off heat. Chop the peppers into small chunks and add to the tomato mixture. Halve kalamata olives and add to bruschetta. Salt and pepper to taste. Serve on flat bread, I like focaccia or a baguette works too. It's also yummy to have fresh mozzarella chunks to eat with it. MMMmmm :)
