Lemon Curdle

1 cup sugar
1/4 cup butter
3/4 cup lime or lemon juice (use a combo - throw in orange for a citrus blend)
1 Tbsp. zest
2 eggs, beaten

Combine sugar, butter, juice, and zest and melt in a saucepan.

When melted, take 2 Tbsp. of the mixture and whisk into the eggs.

Add egg mixture back to saucepan and heat on medium until it simmers.

Simmer for 20-25 minutes, until thick.

For extra bizam you can add more zest!
